Papu-herne-risotto

Välillä ihan perusreseptiä. Meillä on allergiaa sellerille, joten olen korvannut pitkään varsisellerin lähes joka paikassa fenkolilla. Se toimii erittäin hyvin juuri risotossa, kun sen paistaa pehmeäksi, niin siitä tulee mukavan makeaa. Viinin korvaan usein myös yksinkertaisesti viinietikalla, sama happo silläkin tulee ja on paljon halvempaa. Juodaan ne viinit sitten vaikka ruokajuomana. Hinta per annos 0,99€.

Ohjeet
– Prep: kuutioi sipuli, fenkoli ja valkosipuli
– Prep: kiehauta vesi ja liemikuutio, jotta voit lisätä kuumaa lientä risottoon pikkuhiljaa
– Paista sipulia, fenkolia ja valkosipulia viitisen minuuttia ölyssä, jotta se pehmenee
– Lisää riisi ja paista minuutti lisää
– Lisää sitten etikka ja kiehauta sen aikaa, että etikka haihtuu
– Ala sitten lisätä lientä pikkuhiljaa lisää, alkuun pistä sen verran, että riisit peittyvät hyvin
– Kun lientä on haihtunut sen verran, että riisit taas näkyvät lisää lientä
– Sekoittele välillä kevyesti
– Lisäile lientä sen parikymmentä minuuttia mitä riisin kypsyminen kestää, maista välillä onko riisi jo kypsää. Jos liemi loppuu, niin jatka pelkällä vedellä
– Kun riisi on melkein kypsää, lisää herneet ja pavut ja mausta suolalla ja pippurilla, sekoita hyvin
– Lisää margariini risoton päälle ja pistä kansi pannun päälle ja annan margariinin sulaa rauhassa, muutaman minuutin päästä sekoita risotto vikaa kertaa ja tarjoile heti.
