Projekti elossa

Luin joku aika sitten jotain Jamie Oliverin kirjaa, josta silmiin osui Tee Se Itse -viinietikan ohje. Siinä oli vielä hauska tvisti, että kääri viinin jämät pyyhkeeseen ja heitä pullo takalaatikkoon muutamaksi viikoksi pyörimään. En nyt tuoon lähtenyt, mutta vähän googleteltuani päätin kokeilla jostain vanhasta pastöroimattoman viinietikan jämistä ”kickstartata” oman satsin. Kaipa se etikaksi muuttuisi pullossakin, jos vain odottaisi tarpeeksi kauan, mutta sekoittamalla tuollaista elävää etikkaan joukkoon pääsee vähän nopsammin liikkeelle.

Joten desin verran vanhaa etikkaan siihen päälle pistin ihan kokeilumielessä suunnilleen saman verran valkoviinin jämiä. Ei ole mietitty makuja sen kummemmin vaan kokeillaan, että tuleeko siitä etikkaa. Jossain mainittiin myös, että etikan pitää saada happea, joten siinä on ollut liina päällä vain ja välillä olen sitä vähän sekoitellut. Nyt se on tuossa ollut noin kuukauden ja maistelin, että onhan se etikkaa. Taisi kyllä haihtua tuossa kuukauden aikana aika paljon tuosta taivaan tuuliin, mutta nyt on vähän lisää ”kickstart”-etikkaa, niin ajattelin seuraavaksi lisätä siihen punaviiniä. Kasvatellaan tässä pikkuhiljaa siis omaa ”talon etikkaa”. Jossain kohtaa varmaan saa pullotukseenkin asti jotain, mutta vielä ollaan kasvatusvaiheessa.

Kokeillaan sitten jatkossa sekoitella joukkoon kaikenlaista erilaista käymistuotetta, saa ainakin sitten omanmakuista etikkaa, mikä aina on vielä vähän erilaista. Ehkä tästä saa pitkäikäisen ”juuren” itselle. Netissä puhuivat ”vinegar motherista” eli jonkinlainen etikkaäiti, joka siis tarvitaan tähän ”jumpstartiin”.
